Recipe: Sliced/Diced Oven Baked Potatoes as Midnight Snack (Quick)

It's midnight. I don't want to have a big meal. I don't want anything heavy. And I don't want to spend a lot of time prepping.

Here is a quick, hot snack for those late at night meals that taste good and don't take much time to prep and make.

Overview Step-by-Step:

  • Step 1: Peel the sweet potato and dice it
  • Step 2: In a pan to mix - add Olive Oil
  • Step 3: Add salt, cayenne pepper, garlic powder, black pepper and smoked paprika
  • Step 4: Place potatoes on a baking pan
  • Step 5: Preheat Oven at 375
  • Step 6: Bake potatoes for 30-45min

Step 1: Peel and Dice

Peel the sweet potatoes and dice them.

Step 2: Mix with Olive Oil

Place all diced potatoes into a mixing pan. Add Olive Oil and mix.

Olive Oil I use Felippo Berio Olive Oil.

Step 3: Add Spices

Here are the spices I add with links to Amazon if you want to buy the ones I use.

Step 4: Baking Pan

Place diced potatoes on a baking pan.

Step 5: Preheat Oven at 375

Preheat Oven at 375 before placing the potatoes. Preheating usually takes 10 minutes.

Step 6: Bake at 375 for 30-45min

Bake potatoes for 30-45min. Depending on the amount of potatoes you are making the baking times may vary. Check on them periodically.

You don't need to flip them or mix them.

Once they potatoes are soft and color is brown, they are done.
